Kvaefjord Cake
I always make this cake for my partner's birthday. It takes a good deal of effort, but it's worth it. I really like how soft and fluffy it is, and it has a ton of whipped cream, so that's always fun.
It's got a few parts to it you make separately, and then combine. A Cake layer, a Meringue topping, and some Whipped Cream filling. Strawberry topping for extra fanciness.

Ingredients:
Cake Layer
- 150g butter
- 150g sugar
- 5 egg yolks
- 150g flour - sifted
- 1 1/2 teaspoons baking powder
- 100 ml milk
Meringue Layer
- 5 egg whites
- 200g sugar
- 1/2 cup chopped almonds or almond flakes (optional - but I like em)
Whipped Cream
Final Finishing Touches
- Half a carton of strawberries. Sliced in Half, or whole, depending how you like em.
Required Tools
- An Oven
- A Baking Pan, 40 cm x 35 cm preferred, but you can probably get away with something smaller. Don't quote me on that though.
- At least 2 large mixing bowls. 3 if you don't wanna clean one between making the Cake and the Filling layers.
- Measuring Cups and Mixing spoons
- A hand/stand mixer for whipping merringue and cream, unless you really wanna do all that by hand.
- A scale for weighing ingredients.
- Some small ramekins or little bowls for the egg whites/yolks.
Instructions
Prep
- Preheat the oven to 160 degrees Celsius (320F)
- Line an 40 cm x 35 cm baking pan (metal) with parchment paper.
- Separate 5 egg yolks, and keep the whites
Make the Cake Layer
- 1. Add Butter + sugar to big bowl #1
- 2. Beat the butter and the sugar in the big bowl with an electric mixer until light and creamy.
- 3. Stir in the egg yolks one by one.
- 4. In a separate bowl, mix flour + baking powder
- 5. Add the flour mixed with baking powder from bowl to the beaten butter/sugar in the first bowl. Add Milk as well, alternating with the flour.
- 6. Scrape the resulting batter into the baking pan.
- 7. Put the batter pan aside while you make the filling.
Make the Filling
- 1. In a large clean bowl, beat the egg whites and the sugar to soft peaks to make meringue. Google what soft peaks look like, or ask a friend. I always need to.
- 2. Sprinkle on almond flakes (optional)
Putting it all together
- 1. Spread filling on top of cake batter
- 2. Bake for 30-40 minutes on middle shelf until golden.
- 3. Cool the cake in a fridge for a while - overnight if you can shake it, but even an hour is probably fine
- 3a. While the cake is cooling, whip up your whipped cream and keep it cold in the fridge.
- 4. Cut cake into two equal parts so that you've got two kinda square-ish halves
- 5. Place one half of the cake on a serving tray or big cutting board
- 6. Layer whipped cream on top of the 1st half of the cake
- 7. Place the other half, meringue side up, on top for 1st half. This is probably a bit scary.
- 8. Let the cake sit for 1 hour in the fridge before serving
- 9. Top with strawberries in whatever way you think looks fancy. Add more optional almond flakes.
