Palomas are pretty tasty, especially when you use mezcal. I like how the smokiness of the mezcal balances out the rest of the drink. Here's a quick recipe for how I make mine.
Effort Rating: 2/5
Booziness Rating: 3/5
Sweetness Rating: 3/5
Bitterness Rating: 1/5
Acidity Rating: 2/5
1. Slice your lime in half and rub the lime around the rim of your glass to get it moist enough to pick up salt for the salt rim. (Save a thin slice of lime for garnish too!)
2. Rim your glass with salt. (Just kinda mush the glass into a salt pile around the edges)
3. Add the mezcal to your glass.
4. Juice your lime into the glass.
5. Add your big ice cube to the glass. Try to not drop it in from too high up or you'll splash a bit.
6. Top with your favourite grapefruit soda. I use Ting, personally. (I saw a bartender use it at a fancy bar, so I figure it's good enough for me!)
7. Stir till chilled.
8. Garnish with a lime wheel.
9. Enjoy responsibly!
This is pretty easy to adjust to how you like it. You can use less mezcal for something more fruity, or maybe only do a half salt rim (or no salt rim at all) if you're less into salt.
